Easy Fish Fillets with Herb Butter
Herb butters are natural partners for white-fleshed fish, complementing their subtle flavor without being overwhelming. Try experimenting with your favorite fresh herbs when you make this quick, simple dish -- thyme and parsley are also terrific.
Servings: 4 to 6
Ingredients:
* 2 pounds fillet of sole
* 1/4 cup melted butter
* 2 tablespoons fresh lemon juice
* 1 tablespoon fresh tarragon leaf, coarsely snipped
* 1 tablespoon fresh chives, snipped
* 1/4 teaspoon salt
Directions:
Preheat the oven to 350 degrees F. Brush the fillets with the butter. Sprinkle with the lemon juice. Arrange in a greased 13-by-9-by-2-inch baking dish. Cover the dish with foil. Bake for 30 minutes, or until the fish flakes easily with a fork.
Combine the rest of the butter with the tarragon, chives and salt. Heat slightly. To serve, put the fillets on a platter; pour warm herb butter over them.
Substitution tip: Frozen fish may be substituted. Cod is great too!
