1 Tbsp canola oil
1-1/4 pounds (4 to 5-ounce pieces) skinless, boneless chicken breast
3 Tbsp orange juice concentrate, thawed
1 cup mandarin oranges or tangerines, canned (no sugar added)
2 cups mushrooms, sliced
1/2 cup scallions, thinly sliced
2 tsp all-purpose flour
2/3 cup fat free chicken broth, canned, low-sodium
Directions:
In a large skillet heat oil over medium-high heat. Add chicken and cook until browned on both sides. Remove from skillet and set aside. Add mushrooms to the same skillet and cook over high heat, stirring occasionally, until all the liquid has evaporated. Add flour to mushrooms and stir well to coat. Gradually add chicken broth while stirring, then add orange juice. Continue to stir and bring mixture to a boil. reduce heat, add chicken and simmer for 3 to 5 minutes until meat is thoroughly cooked. Garnish with scallions and mandarin sections and serve.
