INGREDIENTS:
* 4 loin pork chops, about 1 inch thick
* salt, pepper, and flour
* 1 to 2 tablespoons vegetable oil
* 1/4 cup chopped onion
* 2 tablespoons chopped green bell pepper
* 3/4 cup pineapple juice
* 1/2 cup ketchup
* few drops Tabasco sauce
PREPARATION:
Combine flour with salt and pepper. Coat chops with the seasoned flour. Heat skillet over medium heat with oil; brown chops on both sides. Drain off excess fat. Combine 1/4 cup hot water, 1/2 teaspoon salt, 1/8 teaspoon pepper, pineapple juice, ketchup, and Tabasco sauce.Pour over pork chops. Cover and cook over low heat for 1 hour, or until pork chops are tender and thoroughly done.
Serves 4.
