1/4 cup minced onion
1/2 green pepper, seeded
1 ounce almond slivers, unsalted, unroasted
1 cup uncooked long-grain rice
2 cups low-sodium, fat-free vegetable broth
Directions:
In a medium saucepan heat oil and add almonds. Roast the almonds for one to 2 minutes, stirring occasionally. Add vegetable broth to almonds and bring liquid to a boil. Add all remaining ingredients, stir well and reduce heat to simmer. Cover and cook for 15 to 20 minutes until rice is tender.
